This Oktoberfest, have an Octoberfeast!: Fried Tilsit with Cherry Tomato and Basil Coulis

The best part about October is not just the warm weather (though that’s certainly a welcome addition); it’s that it gives us all the excuse to drink beer—or bier, rather—and eat schnitzel, and all in the name of Oktoberfest!

But if you want to try something a little different, and really put the feast into Oktoberfest, then try out recipe for fried tilsit with cherry tomato and basil coulis.

Ingredients:
250g cherry tomatoes, halved
1 cup flour
2 eggs, beaten
1 cup breadcrumbs
4 x 60g slices of Tilsit cheese, cut into trangles
1 clove garlic, minced
2 bunches scallions, chopped
1 cup sliced basil
olive oil for frying
salt and pepper to taste

Method: Coulis
Heat oil in a saucepan, add the tomatoes and garlic and cook until tomatoes are soft. Add the basil and green onions and cook on medium heat, stirring occasionally until the mixture forms a thick sauce. Remove from the heat and set aside.

Method: Tilsit
Place flour, eggs and breadcrumbs in separate bowls, and dip the cheese triangles first in the flour, then the eggs, then and the breadcrumbs. Heat oil in a large frypan and fry cheese until golden brown. Serve with coulis.
